As a full time worker, with the budget of a student, I like to take my lunch with me to work. I also know you are dying to know what a vegetarian eats during the day for five days out of the week (hint, it doesn’t vary much
(Not my actual lunch box, sadly)
Let’s start with my morning snack, not lunch but it does go in my lunch box (well it’s more of a bag, but anyway): a muller rice in an assortment of flavours. This week’s edition came in the apple and raspberry varieties. This does just the trick to quell my growling stomach, since breakfast is at six and I have lunch at one.
What bad thing could you say about soup? I know one, when your parents offer it to you for lunch on a lovely Sunday afternoon, even though you have it Monday to Friday. The one upside is, it doesn’t get boring. Not feeling a tomato soup, have a pea soup (it’s really nice). Bored of minestrone, try cream of veg. You get the idea.
To accompany the soup I have hummus and veg, normally original or red pepper humus with carrots and occasionally other dip-able raw veg.
And to round of this amazing lunch I include the classic banana and apple combo. Lunch just isn’t complete without the classics.
I know you are now wondering, where are the carbs? Well I don’t have any with my lunch, but for afternoon snack I have popcorn. Not just any popcorn either, propercorn. And I don’t think I bought enough.
So there you have it, yoghurt, soup, popcorn, fruit and veg.
